BROCCOLI AND TOASTED NUT
TUNA SALAD

 

Preparation time: 20 minutes

Difficulty:  Easy

Servings: 2

 

Ingredients:

2 Broccoli

1 bunch of Pine nuts

1 Roma (or small) tomato

1 tbsp of sherry vinegar

1 pinch of salt

1 pinch of pepper

Olive oil

 

Preparation:

Sautee the pine nuts in a saucepan with no grease, until brown. For the broccoli, cut in small pieces, boil for 1 minute, and then place in iced water. Strain, and mix with the nuts, tuna, diced tomatoes, vinegar, black pepper,salt, and olive oil. Serve as a salad, add cottage cheese if you desire.

 

Wine recommendation:  Concha y Toro Amelia, Chardonnay (Chile)
