Food Safety and Quality
 
In addition to having in place the industry-standard programs of good manufacturing practices and Hazard Analysis and Critical Control Points (HACCP), Tonnino has gone many steps further, being one of a select few seafood manufacturers on the American Continent to have been fully certified ISO 9001 (Det Norske Veritas),  EFSIS and IFS approved. The facility also incorporates a technologically-advanced waste-water treatment plant which greatly exceeds the standards required by the local regulations. This plant ensures that Tonnino does not pollute the surrounding land and rivers and eventually the Pacific Ocean itself, source of the company’s livelihood.
 

Food Safety

 

Tonnino implements Good Manufacturing Practices, a food safety program maintained through the production year which guarantees a clean and safe process.  It includes training programs, employee instructions, preventive maintenance of equipment and daily verifications. All personnel use sanitary uniforms, which are washed daily at the company’s laundry as well as hair and beard protectors.  Before entering the facility they must follow strict processes of adequate cleaning and disinfections of their hands and arms.  Food, tobacco, drinks and chewing gum are banned in the facility in order to prevent environment contamination.  The whole production facility is sanitized twice a day, under the strictest controls, guaranteeing the food safety of our products.  

 

 

Quality Control
 

Due to the Hazard Analysis Critical Control Point implementation, the Company maintains a traceability program which controls every step of the production process, from the vessels at sea to the labeling of the can.  Established control procedures are followed with regard to raw material coming into the facility. The temperature of tuna is monitored by highly technological equipment throughout the delicate process of cooking and sterilization.  Internal and external audits of HACCP system are carried out through the year, and documented reports are kept to evaluate and control our process constantly.  All this with the purpose of ensuring that every product leaving the facility has been tested to comply with the quality and food safety standards.
